For this reason, it is important to precede the purchase with a thorough comparative analysis in order to find the solution that best suits your needs, which performs its task precisely by optimizing the preparation times for dishes that are good to eat and beautiful to look at.

But how to find the perfect professional vegetable slicers for us? As we said, the functions of a mandolin are to cut, chop, and slice some types of food that usually require more effort to be cut manually. This occurs through blades that can have a vertical or V-shape, but there are also other variants to consider.

For example, the material, which can be ABS plastic, wood or stainless steel, the operation of the tool which in most cases is manual but can also be hand cranked or electric, any accessories present in the pack which mainly concern the safety of who uses the tool, and the possibility to vary the cut as thickness or opting for more creative cuts such as julienne and wavy.

What Is a Mandolin or Vegetable Slicers?

The mandolin is a really useful tool in the kitchen, perfect for speeding up most preparations and for cutting vegetables in an optimal way with minimal effort. Also called vegetable mincer, vegetable slicer or vegetable slicer, this appliance is widespread both in the professional and domestic sectors.

The main function of the mandolin is to cut, slice or mince fruit and vegetables with a medium-hard consistency, an operation that, if done manually, could be difficult and dangerous. The use of this accessory will, therefore, allow on the one hand to reduce the possibility of unpleasant accidents; on the other, it will allow to obtain uniformly cut ingredients.

Among the various models currently on the market, it is possible to find numerous differences related to different aspects, such as the materials that make up the product, their structure, and their operation. Types of Vegetable Slicers

The first characteristic to evaluate when looking for the most suitable mandolin concerns the type. Among the models of vegetable cutters currently on the market, it is, in fact, possible to identify three macro groups of products that differ in function and structure.

Before describing their specificities, it is necessary to underline that there is no better typology than the others, but the choice, in this case, will depend solely on the user’s needs.
After this small introduction, we see the main characteristics of these three types of the vegetable slicers.

Manual vegetable Slicers

It is the most classic model, very suitable for users looking for an inexpensive but efficient product.
The main feature of the manual vegetable slicer is the absence of connections to the electrical network. The cutting of the vegetables must, therefore, be done completely manually. The structure of these products is usually very compact, and the materials, additional accessories, and cutting functions may vary according to the price range.

The great advantage of this type of vegetable cutter is, on the one hand, the excellent handling; on the other, the selling price usually quite low. Its main defect, however, is related precisely to manual operation since to ensure optimal results, it will be necessary to exert a strong enough pressure that involves a certain physical effort.

Remember that not all manual vegetable slicers are the same, as based on the shape of the blades, it is possible to divide this category of products into three further subgroups. We will analyze this aspect in more detail in the paragraph dedicated to the types of cut.

Electric vegetable Slicers

This second type of vegetable slicer is instead characterized by a structure similar to that of food processors and by the presence of an electrical power supply. The operation of these models will be completely automated. These products usually have interchangeable discs or cones with which it is possible to carry out different types of processing, from julienne cutting to slicing.

Their price will be higher than manual mandolins or crank vegetable cutters; however, the processing of vegetables will be very easy and fast. It will, therefore, be possible to process larger quantities of vegetables without any effort.

The disadvantage of these products is the size; therefore, we recommend buying them for those who do not have space problems in the kitchen and for those looking for a particularly efficient model.

Crank vegetable Slicers

The third type is that of crank vegetable cutters, appliances that can be considered a sort of hybridization between the two macro groups previously described, as they have an average bulky structure and at the same time a manual operation.

Like electric vegetable cutters, even those with crank are usually equipped with interchangeable cones or discs; the only difference is that the processing of the ingredients does not take place automatically but manually. These models will, therefore, not be equipped with a cable for the electrical network, but rather with a crank which, if rotated, activates the rotation of the discs or cones.

Compared to manual vegetable slicers, the crank vegetable cutters offer the advantage of being able to process a greater quantity of ingredients with less effort, so it will be easier to obtain homogeneous results.

Spiralizers

The latter type of vegetable cutter is very particular: these are machines that are able to process vegetables with a hard or semi-hard consistency, transforming them into real spaghetti. Spiralizers are increasingly popular on the market and are mainly used to create vegetarian or vegan dishes in which vegetable spaghetti are real protagonists.

Spiralizers can be both electric and manual; in both cases, they have a support structure, a pin that serves to hold vegetables and various interchangeable disks or cones, thanks to which it will be possible to make strips of more or less thin vegetables. In some cases, there is also a particular blade that allows us to obtain strips with a wavy edge.

Structure

The structure of the vegetable slicers is an important aspect to take into consideration as we find some elements that have a decisive influence on practicality, versatility, and manageability. First of all, the characteristics of the machine body must be taken into consideration, but for this purpose, it is necessary to refer to the different types of the vegetable cutter. The manual mandolin is presented as a single rectangular body, with a blade of variable shape and thickness in the center. It is a very simple basic structure that can be enriched with extra components such as a support hook or an integrated container.

A very important component for the manual mandolin is the finger guard, that is a sort of plastic presser that helps to exert a homogeneous pressure on the blades and allows to protect the fingers from the blade. The electric vegetable slicer and the spiraliser have, as already mentioned, an appearance very similar to a food processor. In the upper part of the machine body, there is a tube for inserting the ingredients of variable width, directly connected to the rotating blades: just insert the ingredients inside with the help of a press.

Some models are equipped with an integrated container, while in other cases, it is necessary to affix a bowl or a plate to collect the processed vegetables. Even in the crank vegetable cutter, we find the same structural characteristics, and the only difference is the presence of the crank.

Types of Blades

The most important components of vegetable slicers are undoubtedly the blades. The type and quantity of blades supplied, in fact, determine a greater or lesser versatility of the appliance.

Before considering the possible types of cuts, it is necessary to make a clarification on the shape of the blades. In manual vegetable slicers, the blades can have three different shapes: horizontal, oblique, and V-shaped. All three types allow the same type of cut to be cut into more or less thin slices. The difference between the three forms is related to the intensity of the pressure that must be made on the vegetable to make the cut. With the horizontal blades, a very firm pressure will be necessary, with the oblique blades a medium pressure and with the V- blades a medium – low pressure.

On the other hand, in electric and crank cotters, the blades usually come in the form of discs or interchangeable cones, each of which corresponds to a different type of cut.
Manual vegetable slicers can also be equipped with interchangeable blades, to be used to make various preparations. We list below what types of cuts are usually allowed.

Types of Cut

Slices: The slicing of vegetables is the main purpose of the mandolin, both because the preparations with sliced vegetables are really infinite and because it is very simple to make. This cut is, in fact, possible with all vegetable slicers, even with the simplest models without interchangeable blades. The thickness of the slices will vary according to the product, but the standard value is 2 mm. However, it is possible to find on the market vegetable slicers that have more than one slicer blade, each with a different cutting thickness.

Julienne: Another type of classic cut is the julienne cut. Also, in this case, it is possible to find models that have several blades dedicated to this type of cut, each with a different thickness. The blades for julienne cutting have a perforated surface, similar to that of a grater.

Stick: This cut is ideal for the preparation of fried vegetables such as French fries, aubergine sticks, courgettes in tempura and sweet potato sticks.

Cubes: As for slices, even cubes made from mandolin can have different sizes. Some models are equipped with different sets of blades for cubes, each with a different width; other models, on the other hand, only allow the creation of cubes with a standard size of about 2 cm.

Spiral: Spiral cutting is a recent trend. With the blades suitable for making this cut, it is possible to create the famous vegetable spaghetti, an innovative way to serve your side dishes, or to create special recipes. In appearance, these blades are similar to those for julienne cutting, only the size of the holes changes, which in this case is greater.

Accessories

We have just listed the most common types of cuts, but on the market, it is still possible to find vegetable slicers equipped with additional accessories that allow other types of processing. Among the many additional components, we mention the juicer accessory, the potato peeler, and the blades to make slices with a wavy or pitted surface. The more particular models of vegetable cutters can also be equipped with special rollers or discs for grating cheese or other particularly hard ingredients such as spices or roots.

Finally, remember that it is advisable not to work too soft ingredients such as tomatoes or cooked vegetables since with these consistencies, no blade ensures optimal performance.

Materials and Maintenance

Another important element to evaluate concerns the materials that make up the mandolin. This aspect must be carefully assessed as price and durability depend on it. Before seeing the specificities related to the three types of mandolin, it must be remembered that, regardless of the type of product, the blades, cones or discs are usually made of stainless steel. This material, on the one hand, allows a better cut; on the other, it is resistant to wear and deterioration. Furthermore, stainless steel can be cleaned at high temperatures so that blades, cones, or discs in this material can be washed either by hand or in the dishwasher.

Manual vegetable slicers are usually made of metal or hard plastic. Among the metal products, the best models are those in stainless steel, which are usually more expensive than plastic mandolins, but allow easier processing of the ingredients and are more durable over time. Plastic vegetable slicers, on the contrary, are decidedly cheaper; however, they are more fragile and less resistant to wear and high temperatures.

Whatever the type of vegetable chopper you have chosen, our advice is to buy models that can be easily disassembled, since, in this way, a thorough cleaning will certainly be easier. If you prefer to opt for a product with fixed components, we suggest you use a hard bristle brush to clean the inside of the ingredients insertion tube, which can also be used to remove the residues of ingredients possibly found between the blades.
