The conservation in question consists in the elimination of oxygen and air contained inside the bag or containers, thus preventing the proliferation of biological activities inside them.
Moreover, the bags used are generally waterproof, resist humidity and are a guarantee of freshness since they protect the contents from the action of bacteria and the contamination of external odors.
This technique is indicated for almost all the ingredients and raw materials, but also ready-made preparations, and its practice shows undeniable and evident advantages :

Usually, it is a central body of regular shape, made of resistant materials such as hard plastic, aluminum or, better, stainless steel, which can be positioned horizontally or vertically.

Sometimes a liquid collection tray is provided, in which any condensation or some processing waste of fresh elements is conveyed.
